Spinach Feta Crispy Gnocchi

Ingredients:
- 1 16oz package of gnocchi
- Enough olive oil to coat the gnocchi (~1.5 Tbsp)
- Pinch of salt (not too much because the feta is salty too)
- Half a package of (thawed) frozen spinach (~6oz)
- Half a lemon (2 Tbsp lemon juice)
- 6 oz vegan feta (one container of Follow Your Heart Feta)
- 3 cloves garlic, grated
- 5 Tbsp olive oil
- Salt and pepper to taste
- Crushed red pepper flakes
- Smoked paprika
Instructions:
- Add gnocchi, olive oil, and salt in a bowl and mix until coated.
- Place gnocchi onto sheet pan and into 425 degree oven for 25 minutes.
- Add spinach, olive oil, lemon juice, feta, garlic, and spices to a bowl and mix until combined.
- Take gnocchi out of the oven and toss in spinach feta mixture until combined. Serve!
